Effects of Stocking and Transport Conditions on Physicochemical Properties of Meat and Acute-Phase Proteins in Cattle

This study’s objective was to evaluate the effects of distance and stocking density on physicochemical properties oxidative stability meat acute-phase proteins in Brahman crossbred cattle transported by road under hot humid tropical conditions. Sixty heifers were subjected transport from a feedlot farm located Universiti Putra Malaysia (UPM), Serdang, commercial ruminant abattoir Shah Alam, Selangor. Animals assigned long short distances high, medium, low densities. The results revealed that intensity response significantly increased samples animals long-distance transportation higher density. Alpha-1-acid glycoprotein serum amyloid-A values considerably different baseline recorded at preload. In conclusion, current color, pH, shear force values, water holding capacity (WHC), glycogen level, malondilaldehyde assay (MDA) concentrations (APP) affected both densities, as evidenced significant changes parameters above.
